Give Your Avocado a Little Crunch!


Avocado Tacos with Cilantro-Lime Slaw  
8 Tacos

2 cups shredded red cabbage

1 cup shredded carrots

2 green onions, thinly sliced

1/2 cup cilantro (plus more for garnish)

2-3 tablespoons plant-based mayo, such as Just Mayo
Juice from 1 lime, and 
1/4 teaspoon agave nectar
 Salt and pepper to taste

2-3 avocados

1/4 cup panko crumbs

1/8 teaspoon cumin

1/4 teaspoon smoked paprika

1/8 teaspoon chili powder

8 tortillas
Jalapeño (optional, for garnish)

1. Preheat oven to 350 degrees.

2. To prepare the slaw, combine the shredded cabbage, carrots, green onions and cilantro in a medium mixing bowl. In a separate dish, mix the plant-based mayo, lime juice, agave, salt and pepper. Pour the dressing over the slaw and mix well. Cover and refrigerate while preparing the tacos.

3. Mix the panko crumbs, cumin, smoked paprika, chili powder, salt and pepper together in a shallow dish.

4. Slice the avocados in half. Using a spoon, go along the edge of the avocado, separating the avocado meat from the skin. Then, slice each avocado half into 4 pieces. Dredge the avocado slices in the panko crumb mixture and place on a lined cookie sheet. Bake for 10-15 minutes, until breading turns golden.

5. Warm up the tortillas in the oven by placing shells directly on an oven rack for 3-4 minutes (keep an eye on them so they don’t burn). Place 2 avocado slices on each tortilla and top with the cilantro-lime slaw, extra cilantro and jalapeños.

Garbanzo and Sun Dried Tomato Tasty Spread

Garbonzopate Garbanzo and Sun Dried Tomato Tasty Spread

Ingredients (use vegan versions):

    2 cup garbanzo beans (cooked)
    2 cloves garlic
    1/2 cup sun dried tomatoes (soak in warm water if they are dried to plump them up)
    1/2 tablespoon balsamic vinegar
    1/2 teaspoon dried basil
    1/2 cup walnut halves (use less if they are more chopped up)
    1-2 tablespoons water to make it more "mushy" (if desired)


Place everything except the water into the bowl of a food processor. Pulse 5-6 times until mixed and chunky. You can pulse it more if you want something more spreadable, but I enjoyed it with some texture.

If it is really crumbly and you don't like that, add 1-2 tablespoons of water, mixing it in until you get the texture/consistency you want.

Eat with some raw veggies as a snack or put on a sandwich! Hope you enjoy.

Yummy Mock Chicken Salad

Ingredients (use vegan versions):

    1 can chickpeas
    1 green pepper (diced)
    1/2 onion (diced)
    about 1/2 cup Nayonaise or Ranch dressing
    salt and pepper to taste


Pour the beans in a medium bowl and mash with a potato masher until chunky.  Toss in green pepper, onion, dressing and seasoning and stir.  You can also substitute celery for the green pepper, I just prefer green pepper.

You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato.  Delicious!  I have served this to plenty of meat eaters and they love it!
